It is cold here in the STL so I am heating up
the house by preparing my meals for the week. Turkey chili, Turkey taco
meat for taco salads without the shell, black beans and rice, grilled
chicken and salmon are all on the menu this week. Who else is meal

I am started my journey 3 years ago and I have come a long way and I
can tell you that I am healthier and fitter than I was when I was 20 and
I am 48 years old. If I can do this anyone can. If any of the above

As winter approaches it is time to rethink our strategy. Summer allows us to do things outside to add to our daily exercise routine but winter is a different story. Don't let winter give you an excuse to slow down. It should give you a reason to increase your intensity.

Ingredients:2 cups old-fashioned rolled oats½ cup raw cashews1 dash sea salt1 Tbsp. coconut oil, melted1 cup water1 tsp. vanilla extractNonstick cooking spray1 cup mixed berries1 Tbsp. pure maple syrup (or raw honey)
Preparation:
1. Preheat waffle iron.
2. Place oats, cashews, and salt in food processor or blender; pulse until
coarsely ground.
3. Add oil, water, and extract; pulse until well blended. Batter will be thick,
but if it is as thick as paste add 2 to 3 additional Tbsp. of water.
4. Pour ¼ of batter into waffle iron, lightly coated with spray; cook for about
2 to 3 minutes, or until waffle iron indicates waffle is cooked, or until
waffle is cooked through.
5. While waffles are cooking, combine berries and maple syrup in a medium bowl.
Slightly mash berries to release some juice.
6. Serve waffles topped evenly with berry mixture.

Ingredients:
1 15-oz. can pure pumpkin
1 12-oz. can evaporated fat-free milk
1/2 cup liquid egg white
1/4 cup agave
2 tsp. pumpkin pie spice
Directions:
1) Preheat oven to 350 degrees.
2) Combine all ingredients in a bowl, and mix
thoroughly.
3) Place mixture in a baking dish (8″ X 8″ works
well) sprayed lightly with nonstick spray, and bake in the oven for 45 minutes.
(It will remain a little soft, like pie filling.)
4) Once ready to serve (it’s
delicious eaten hot or cold), cut into 9 pieces.
